Homemade Cheese Crackers

Homemade Cheese Crackers // The Haas Machine


  • 1 cup sharp cheddar cheese, shredded
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon kosher salt
  • 3/4 cup flour
  • extra course kosher salt for sprinkling, optional


  1. Add all ingredients (except for the additional kosher salt) into a food processor & process until a dough forms (about 2-3 minutes).
  2. Shape the dough into a disk & wrap it in plastic wrap. Refrigerate it for at least 1 hour. After an hour, set it on the counter to soften a bit while you preheat your oven to 350 F.
  3. Roll the dough out on a piece of parchment paper until it is about 1/8 inch thick (you may need a bit of additional flour for the rolling pin if the dough is too sticky). It's very important that you roll the dough as thin as possible or the crackers will not be crunchy. Use a pizza cutter or pastry wheel & make 1-inch squares (you can also use cookie cutters to make shapes). Sprinkle the dough with kosher salt if desired.
  4. Use a toothpick to make a hole in the center of the cracker. Place the dough on a cookie sheet lined with non-stick foil, parchment paper, or a silpat & bake for 10-12 minutes or until bottoms are barely golden.
  5. Let the crackers sit on the pan for a minute before removing to a cooling rack. Crackers will crisp up more as they cool so be sure not to over bake them.
