Peanut Butter Oat Chocolate Chip Muffins



  • ¾ cup whole wheat flour
  • ½ cup white whole wheat or all-purpose flour
  • 1 cup quick oats
  • 1 tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp salt
  • ¼ cup demerara (raw) sugar
  • ½ cup natural peanut butter (we love Smuckers)
  • ½ cup Greek yogurt
  • 1 egg
  • 1 tsp  vanilla extract
  • ¾ cup milk
  • ½ cup chocolate chips
Cooking Instructions
  1. Preheat the oven to 375 deg F.
  2. In one large bowl mix all the fry ingredients that is, all flours, oats, baking soda, salt and sugar.
  3. In another bowl mix all wet ingredients that is, peanut butter, youhurt, egg, vanilla extract and milk.
  4. Slowly fold in the wet ingredients into the dry mixture until its smooth and lumpfree.
  5. Now stir in the chocolate chips.
  6. Line up muffin tins with paper liners or use the  silicone muffin molds.
  7. coop the batter into the tins or molds by filling only 2/3rds their capacity.
  8. Bake for 15-20 mins checking in between.
  9. Insert a toothpick in the center of the muffin and check whether it comes our clean.
  10. If so carefully take out the muffins from the tins or molds and leave them to cool off.
  11. Store in an airtight container.
